Benchmarks
What is a good food cost percentage?
Healthy targets vary by concept, but these are the standard guidelines most restaurants price against. For the full costing-to-pricing workflow, read our restaurant food costing and menu pricing guide.
Food Cost Percentage
25%–35% is standard for most restaurants. Above 40% leaves little room for labor, rent, and profit.
Gross Margin
65%–75% is the healthy counterpart. If food cost is 30%, gross margin is 70%. They always total 100%.
Gross Profit Per Dish
Selling price minus ingredient cost. This is before labor and overhead, so it must comfortably cover the rest.
